The Honey Cake I made at Sutton Bonington Show went down a treat so, as promised, here is my recipe for the honey cake.
- 250g Whatton Apiaries clear honey (plus 2tbsp to glaze)
- 225g butter
- 100g dark soft sugar
- 3 large eggs
- 300g Whatton Farm White Spelt Flour
- 4 tsp baking powder
Pre-heat the oven to 140 degrees (fan oven). Melt the sugar, Whatton Apiaries honey and butter gently. Once melted into a liquid, boil for 1 minute. Leave to cool for 15-20 minutes.
Beat in the eggs and sift Whatto Farm White Spelt flour until smooth- it will be runny. Bake for 50 minutes-1 hour.
Brush over 2 tbsp of Whatton Apiaries honey while still warm.
A nice simple cake to bake and enjoy!
